Ingredients
1 (2 to 3 lbs) rack baby back pork ribs
3 Tbs Brookshire’s Rack Rub Seasoning
2 cups cola, divided
1/2 cup ketchup
1/3 cup brown sugar
1/4 cup Worcestershire sauce
2 Tbs yellow mustard
1/2 tsp chipotle powder
Directions
  1. Line a rimmed baking sheet with foil, leaving excess on the sides to fold up around the ribs. Trim the back side of the ribs of excess fat and membrane. Place the ribs on top of the foil. 
  2. Pour 1 cup of cola over the ribs. Sprinkle both sides of the ribs with the seasoning. Place the ribs meat-side down on baking sheet. Fold the foil up around the ribs. Refrigerate for 6 hours or overnight. 
  3. In a saucepan, whisk together the remaining 1 cup of cola and remaining ingredients. Bring to a simmer. Cook for 10 minutes or until the sauce begins to thicken. Remove from heat to let cool. 
  4. Preheat oven to 300° F. Place in the oven, still covered with foil. Cook for 1.5 to 2 hours. Remove from oven. Finish the ribs over a medium-hot grill, basting with half the sauce. Grill each side for 5 to7 minutes. Let the meat rest for 15 minutes before cutting and serving. Serve with remaining sauce.
